Lisans eğitimini 2010 yılında Ege Üniversitesi Biyomühendislik Bölümü’nde tamamladı. Yüksek lisans derecesini 2013 yılında Ege Üniversitesi Biyomühendislik Anabilim Dalı’nda aldı. Yüksek lisans çalışmaları sırasında ERASMUS değişim programı ile Belçika’da bulunan Gent Üniversitesi, Biyoteknoloji Bölümü’ne gitmeye hak kazandı ve metabolizma mühendisliği ile ilgili çalışmalara katıldı. 2013’te Marmara Üniversitesi Biyomühendislik Anabilim Dalı’nda başladığı doktora eğitimini 2018 yılında tamamladı. Aynı süre içerisinde Marmara Üniversitesi Biyomühendislik Bölümü’nde araştırma görevlisi olarak çalıştı. Doktorası sırasında bitki kökenli çeşitli maddelerin antimikrobiyal etki mekanizmaları ve beta-laktamaz enzimindeki allosterik regülasyonlar üzerine araştırmalar yaptı. Ayrıca kazandığı FEMS Araştırma Bursu ile Lyon, Fransa’da bulunan Ulusal Bilimsel Araştırma Merkezi’nde (CNRS-Centre National de la Recherche Scientifique) bakteriyel membran proteinlerinin karakterizasyonu ile ilgili çalışmalar gerçekleştirdi. 
Üsküdar Üniversitesi Biyomühendislik Bölümü'nde çalışmalarına devam eden Fatma Gizem Avcı’nın ilgi alanları arasında antibiyotik direnci, protein mühendisliği, metabolizma mühendisliği, omik teknolojiler ve endüstriyel biyoteknoloji bulunmaktadır.
