Filter coffee is not made with bonnets and women's socks

Stating that during the production of materials such as women's socks and bonnets, unwanted foreign substances such as dust, feathers, hair, small insects and flies can easily crawl on these materials. Instructor Öznur Eyilcim said that "The fact that these produced materials come into contact with the environment, become polluted and carry foreign substances on them poses a great risk to human health."

Üsküdar University Vocational School of Health Services Food Technology Chemical Engineer Instructor Öznur Eyilcim evaluated the use of materials such as bonnets and women's socks to make filter coffee due to increasing costs by some enterprises in terms of food safety.

Food safety aims to protect the consumer

Pointing out that the increase in costs is an important reason for looking for easy and cheap production methods, Chemical Engineer Eyilcim stated that "The biggest goal in food safety is to protect consumers against foodborne hazards; to eliminate or prevent the elements that will be harmful to health and threaten its safety. The contact of personal products such as bonnets and women's socks with any food product is definitely a very important food safety issue."

Conditions in the production of materials such as women's socks and bonnets...

Emphasizing that food is open to physical, chemical and biological risk factors, which threatens public health, Instructor Öznur Eyilcim continued her remarks as follows: "If the use of materials such as bonnets and women's socks in filter coffee is examined as a physical hazard, it is definitely not suitable for food safety. To illustrate, during the production of materials such as women's socks and hair caps, unwanted foreign substances such as dust, feathers, hair, small insects, flies can easily crawl on these materials. Considering that the sterilization process is important for foods, the presence of these foreign substances on the materials that will come into contact with the food or the contamination of these materials by contacting the environment and carrying the foreign substances on them poses a great risk to human health.

It also poses a chemical risk!

Stating that textile products produced under unfavorable conditions may pose biological risks, Chemical Engineer Eyilcim said: "Factors that cause biological risks such as viruses, parasites and bacteria will significantly affect human health. Finally, when examined in terms of food safety, the use of hair bonnets and women's socks in making filter coffee has the greatest chemical risk. The structure of many garments, such as hair bonnets and women's socks, can consist of polyamide-based synthetic fiber, polyester or acrylic, which we call nylon. Exposure of these substances to high temperatures can cause dissolution as a result of structural deterioration. Moreover, synthetic dyes are also used to give color during the production of hair caps and women's socks even if all these substances are harmless, and harmful auxiliary chemicals are used for bleaching."

Muslin suitable for disinfection can be used

Stating that the use of and women's socks during filter coffee making can cause chemicals to dissolve in hot water and cause many diseases such as cancer. Instructor Öznur Eyilcim said that "Food-grade materials such as disposable special filter papers or muslin 100 percent cotton new generation filters suitable for reuse and disinfection can be used for the coffee filter process. Products such as women's socks and bonnets should never be used except for personal use."

Food products should not be prepared without the use of gloves

Instructor Öznur Eyilcim stated that the biggest risk that will threaten human health in cafes and restaurants is caused by cross-contamination and continued as follows:

"With this contamination, harmful bacteria and viruses, which are biological factors, pass from one surface to another. The source of this contamination may be employees, work surfaces, equipment used, devices, cleaning apparatus. In the case of employees, hands are in direct contact with food and contamination is common in food products prepared without using gloves. Insufficient disinfection of hands or various cloths used for hand cleaning pose a great risk to public health.

Apart from this, many processes such as not cleaning and disinfecting the work surfaces sufficiently, using equipment such as spoons, knives or cutting boards for more than one food without cleaning them cause contamination."

Food health and safety training for employees is a must

Noting that measures should be taken to eliminate the elements that threaten public health, Chemical Engineer Öznur Eyilcim concluded her remarks as follows: "First of all, regular inspections of the enterprises should be carried out and necessary actions should be taken to detect situations that do not comply with the legislation. Another important issue is the training of working people on food health and safety. Consumers who witness the use of materials that are not suitable for food safety and threaten public health in cafes and restaurants should definitely call the ALO174 Food Line of the Ministry of Agriculture and Forestry and make a notice and complaint."
