Today, the fact that the industrial areas where enzymes are used have increased considerably, the amount of pure enzymes produced using microorganisms has reached a value of 500 tons per year and the economic value of the products formed is very high has brought along the importance of studies in this field day by day. Although microorganisms are used in the production of approximately 200 of the 4,000 enzymes used in various sectors, only 20 enzymes are produced on an industrial scale. On the other hand, world enzyme demand is met by approximately 12 large producers and 400 small suppliers.
