Üsküdar University’s Principles of Nutrition Applications Laboratory is a modern application and research center where the physical, chemical, and sensory changes that foods undergo during preparation, cooking, and storage processes are examined using scientific methods.

  • Main Purpose: To enable students to transform their theoretical knowledge of food chemistry, basic nutrition principles, and menu planning into practice in a kitchen and laboratory environment. The aim is to analyze standard recipe development processes in accordance with healthy nutrition principles at both microscopic and macroscopic levels.
  • Academic Contribution: The laboratory improves students’ operational competence in clinical and community dietetics by enabling them to learn preparation techniques that minimize nutrient losses, make specific recipe modifications for different disease groups, and scientifically test the sensory and physical properties of foods.

Devices and Technical Equipment Available in the Laboratory

The laboratory infrastructure has industrial and scientific equipment that enables the preparation, heat treatment, and analysis processes of food materials to be carried out in a controlled and standardized manner. Within the framework of its Highlighted Features, the technical equipment available in the laboratory is listed below:

  • Precision Analytical and Digital Scales: Used for the accurate measurement of food ingredients, additives, and recipe materials at milligram and gram levels and for the standardization of standard recipes.
  • pH Meters: Measuring devices used to determine the acidity and alkalinity levels of foods, monitor fermentation processes, and analyze food chemistry reactions.
  • Refractometers: Optical instruments that determine the amount and concentration of dissolved solids in liquid solutions (sugar solutions, sauces, etc.) by measuring their refractive index.
  • Temperature-Controlled Industrial and Household Ovens / Stoves: Units used to test the cooking times and temperature curves of foods and the effects of different heat treatment methods (dry heat, moist heat, etc.) on nutritional value.
  • Homogenizers and Blender Sets: Mixing and processing systems used to homogenize food samples before analysis and to create emulsions and gel structures.
  • Vortex Mixers and Heated Magnetic Stirrers: Devices used to homogenously mix chemical solutions and food extracts at specific temperatures.

  • Standard Recipe Development and Modification: Development of alternative standard recipes that are gluten-free, low-glycemic-index, or reduced in sodium for chronic diseases such as celiac disease, diabetes, and hypertension, or for special dietary conditions such as vegan/vegetarian nutrition.
  • Sensory Evaluation (Panel) Studies: Scientific testing of newly developed or modified food products according to criteria such as taste, aroma, appearance, texture, and overall acceptability.
  • Food Hygiene and Safety Practices: Practicing protocols for preventing cross-contamination risks and maintaining personal and area hygiene throughout the process from food preparation to service.
